Ingredients

1 can of organic corn, use 2/3 can in sauce, save ⅓ for garnish at the end

½ red onion sliced

1 tbs miso paste

1 garlic clove, minced

¼ cup chicken bone broth
-
1 tbs EVOO
-
1 pack Organic ground turkey
-
3 garlic cloves, minced
-
1 tbs dark soy sauce
-
1 tbs light soy sauce
-
1 tbs black vinegar
-
1 tbs butter (kerrygold)
-
1 tbs EVOO
-
Spaghetti (use 100 grams of noodles per one person), In this case I used 400 grams for 4 people

Noodle of Choice (I used spaghetti for this since I didnt have ramen or udon)
Directions
Miso Corn Sauce
In your skillet on medium heat, add your olive oil.
Once heated, add garlic and cook until fragrant (1-2 min)
Add Onion and corn, cook until onions are translucent
In your food processor add softened garlic, onion corn, miso, and chicken stock. Purée until smooth. Add small amount of salt if needed to taste
Set sauce aside until noodles and meat are complete
Soy-Marinated Ground Turkey
In your skillet on medium-high heat, add olive oil, garlic and cook until fragrant
Place meat into skillet and cook meat through completely, mincing as you go.
Add light and dark soy sauce, black vinegar, cook 5 minutes
Remove meat from heat. Add butter while it’s hot.
Finish with a couple shakes of sesame oil, cover with lid and set aside.
Boil Noodles of Choice (I used Spaghetti here since I didn't have ramen on hand)
Spaghetti noodles: boil noodles al dente, about 7-8 minutes
Assembly
In a skillet on medium-low heat, add your purée and toss your noodles in it , cooking for additional 2 min.
In a bowl add saucy noodles, a couple heaping spoonfuls of meat
Finish with a dash of sesame oil, a sprinkle of sesame seeds, green onion, a spoonful of corn, and a drizzle of peperoncino EVOO or chili crisp! Buon Appetito!
Recipe Note
You could sub a different meat like pork or chicken. To make it vegetarian friendly you could sub tofu or impossible "meat".
Noodle options: Udon, Ramen, Glass noodles, Egg noodles, Spaghetti, Hand-pulled noodles
